VEGETABLE FRITATA WITH TUNA

Ingredients:
	2 tablespoons 		butter 
	¼ cup			chopped onions
	1/3 cup 		sliced mushrooms
	1/3 cup			chopped red bell pepper
	1/3 cup			chopped green bell pepper
	6 			eggs, slightly beaten
	½ teaspoon 		salt
	¼ teaspoon 		pepper 
	1-180 grams 		Century Tuna Flakes in Vegetable Oil, drained 
	1 bundle		spinach, blanched
	1 			cooked eggplant, mashed
	2 tablespoons		Parmesan cheese
				crusty roll
				tomato slices for garnish

 

Procedure:

Heat butter in a pan. Sauté onions, mushrooms and bell pepper for 2 minutes. Set aside.

Squeeze the spinach to remove excess water and chop finely. Set aside in a bowl.

Combine eggs, salt, pepper, tuna, spinach, eggplant and parmesan cheese. Mix with the sautéed vegetables.

Cook for 15 minutes until the middle is set. Remove from heat. Serve with a crusty roll. Garnish with tomato slices.
