CENTURY TUNA LITE
WATERMELON SUMMER SALAD


Ingredients:
	1 small			red onion, sliced thinly
	2			limes, freshly squeezed
	1-180 grams		Century Tuna Lite, drained
	2 cups			ripe watermelon, sliced into 2-inch thick triangles
	2 tablespoons		cubed feta cheese
	2 tablespoons		chopped mint leaves
	2 tablespoons		sliced pitted olives
	4 tablespoons		extra virgin olive oil
				freshly ground black pepper


Procedure:

In a small bowl, combine onions and lime juice. Allow to stand for 10 minutes. In a medium bowl, combine tuna, watermelons, feta cheese, mint leaves and olives. Pour in olive oil and mix gently. Add onions with lime juice and mix well. Season with black pepper.

Serve immediately.

Makes 4 servings.
